WHEATLESS, EGGLESS, BUTTERLESS, MILKLESS, SUGARLESS CAKE

1 cup corn syrup
2 cups water
2 cups raisins
2 tablespoons fat
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1 cups fine cornmeal, 2 cups rye flour; or, 3 cups whole wheat flour
1 teaspoons baking powder, or, teaspoon soda

Cook corn syrup, water, raisins, fat, salt and spices slowly 15 minutes. When cool, add flour, soda or baking powder, thoroughly blended. Bake in slow oven 1 hour. The longer this cake is kept, the better the texture and flavor. This recipe is sufficient to fill one medium-sized bread pan.

Ingredients
  • 2- cups Flour Of Choice

  • cups Pure Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 cup Pumpkin Puree
  • cups Enjoy Life Brand Mini Chocolate Chips (allergy Free)
Preparation Instructions

Preheat oven to 375.
Combine dry ingredients in one bowl.
In a separate bowl, cream together sugar, oil, maple syrup, vanilla and pumpkin puree.
Add and beat in flour mix Add chocolate chips. Drop onto baking sheet and bake 10 minutes.
These cookies are very moist and cake-like. Yum!

Hippie Loaf


Servings: 4


Description:

A wonderfully easy gluten-free vegan meatloaf that can be made from pantry staples. Whole wheat flour can be substituted for brown rice flour if you do not have a gluten allergy.


Ingredients:

  • 15 ounces black beans, drained and rinsed
  • 1 whole onion, diced
  • 2 whole garlic cloves, minced
  • 1 whole carrot, minced
  • 2 whole celery stalks, minced
  • 1 cup mushrooms, coarsely chopped
  • 1 cup quinoa, cooked
  • 1 tbsp italian seasoning
  • 3 tbsp brown rice flour
  • 2 tbsp low sodium soy sauce
  • 2 tbsp ketchup

Instructions:

Preheat oven to 350F. Grease a standard bread pan and set aside. Mash black beans in a large bowl and combine all ingredients until evely combined. Transfer to pan and pat down firmly and tightly using a spatula. Bake 45 minutes to one hour, until firm and browned on the outside. Allow the loaf to cool and firm up before serving, about 15 to 20 minutes.

If you have a TOMATO allergy but not a dairy allergy, here is a yummy italian bread recipe for you:

Italian Cheese Bread
Submitted by Donna Little
This is a recipe for killer Italian cheese bread. I like to double the recipe because I like my bread really gooey. Trust me, there will be none left. Oh, and you can make this into pizzas by just adding pepperoni and such. It tastes great even though there is no tomato based sauce on it!


6 tablespoons margarine or butter, softened
1/2 cup shredded mozzarella cheese
2 Tablespoons grated Parmesan cheese
1/2 teaspoon oregano leaves, crumbled
1-2 dashes cayenne pepper

Spread on 1/2 loaf of Italian bread. Bake at 400 degrees until the cheese begins to brown, perhaps 10 minutes or so. Yum!

If you have a DAIRY allergy then you could make a loaf of dairy free italian bread use Earths Balance spread in place of the butter and soy or rice cheese in place of the cow cheese and Parma or Galaxy Foods "cheese" in place of the parmasan cheese.

OR
use Cobblestone Mill Hoagie Rolls (they're vegan) for the bread but be sure to keep a close eye on them when they're baking because they might take less time to finish.

GF/CF (gluten free/casein free) Mac and Cheese

1 8oz pkg vegan gourmet brand cheddar 'cheese' (this, while expensive is the BEST non-dairy cheese I have found. It doesn't taste like plastic, and it actually does melt)
1 box gluten free pasta (Brittani prefers wagon wheels for some reason)
c plain soy milk (I cannot stress that enough, do not use vanilla flavored soy milk in this recipe - ask me how I know )

Start a small pot of water boiling with a pinch of salt and tbs or 2 of oil. When the water is boiling (just after the milk is ready for the cheese below) add your gf pasta. Cook as desired.

heat up soy milk in saucepan until it is hot but not scalded. Grate the cheese carefully and add cheese and a PINCH of cornstarch to the milk..... Stir continuously until melted and smooth.

these amounts make enough for dinner for my dd and lunch for the next 2-3 days (since she's the only one in the house who is gf/cf)
