I wanted to bump this to see if anyone has anything to add. Esp for the hot days of summer. We are very very tight on money at the moment trying to save the near nothing that we have to find a place to live. So any easy and very cheap meal ideas would be great.

We do pasta salad a lot here! Very easy, especially if you like chicken (I'm a vegetarian so I leave it out). We grilled up some chicken, cut it up and toss it into the pasta salad. I make mine homemade and make a TON so DH can take it to work.

Well, we're veg/vegan so pretty much everything we eat is pretty thrifty.

This is one of our new favs. I have never liked tomato soup before but I love this recipe! You could use regular cream/milk in place of the cashew cream if you prefer. Duffy has his with grilled cheese sandwiches, Bram and I have ours with oven fries.

Veggie soup. I use a similar base as the tomato soup and add potatoes, carrots, and lentils.

Spanish rice and refried beans (with cheese quesadillas or tortilla chips). I make the rice at home but I just use canned beans. lol

Chili is cheap. Just do more beans, less meat (or none at all). I make mine meatless with black beans, Duffy likes red beans with a bit of meatless crumbles (which aren't too cheap either so I use it sparingly).

We do eat meat, but we do a LOT of meatless meals. Since we only eat kosher meat is hella expensive. I mean like, it's ridiculous. So we are 90% vegetarian. And kosher cheese honestly isn't much cheaper. My 15 yr old is a vegetarian so any non meat or alterable meals work for us. The pasta salad with chicken sounds like a yummy idea though.
And Carly, all your suggestions sound yum too, bean recipes are our staples. But I am 28 weeks pregnant and need food that's not hot, kwim? I don't want to sweat over my food....lol.
I really have been looking for a cheap weekly menu type thing. Does anyone know of those? Like here is a meal plan for a week for $50. It would have to be mainly vegan for us to actually stay within the budget because we will never find kosher chicken for a 1.99/lb or whatever it is.
Anyway thanks for the ideas. I hope more people post. And if I am posting too much in the thread I will stop. I know it's stickied thread.

What about egg salad, you do have to boil the eggs, but eating it is cold

It's a favorite here.

Always breakfast for dinner is pretty cheap, I like to make pancakes and pour them into a big jelly roll pan and bake them in the oven, then you aren't standing over a hot stove, and they are so delicious.

German puff pancakes are a favorite here!, just google it they are soooo good, I make them almost weekly because I love them so much, the rest of the family eats them up, I have also made them with GF flour too, they were still delicious.

I make hash ALL the time, depending what I have in hand, I usually use bacon, sweet and/or white potatoes, white and/or red onion then asparagus/chard/kale/spinach or whatever green veggie I have on hand. Egg or two on top.

2014 $50 Budget Menu Plan Week #24: Welcome to week #24 of our families $50 grocery budget! If you've been faithfully following our menu plans, you may have noticed that we didn't get around to sharing our menu plan last week! We had family come in from out of state to attend our son's Graduation

and with a full house I just didn't get a chance to sit and type it all out. We apologize for letting you down!

This week we purchased the following: Beef Filet (Aldi), 10#'s Ground Turkey, Cream Cheese, Apples, half & half, pound of ham, Sliced American Cheese, cantaloupe, Cottage Cheese, Ricotta Cheese, Greek Yogurt, Almond Milk (Aldi brand), olives, bananas

From our Backyard: Fresh Eggs (Getting nearly 3 dozen per day)

From our Windowsill/ Garden: Lettuce, Chives, Scallions, Fresh Herbs (Cilantro, Parsley, Rosemary, dill, oregano, basil), Spinach, beet greens, baby carrots, onions (grown from scraps), green peppers, Cucumbers, zucchini, summer squash, Tomatoes,
